Pumpkin Olive Oil Mini Muffins with Maple Olive Oil Glaze
Ingredients
Muffins:- 1 cup light brown sugar
- 2 large eggs
- 1 cup pumpkin puree
- 2/3 cup olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- A few grinds of black pepper
- 1/2 teaspoon salt
- 1.5 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup powdered sugar
- 2 tbsp olive oil
- 2 tbsp maple syrup
- Splash of water
- Pinch of salt
Instructions
- Preheat oven to 350F.
- Butter mini muffin dish.
- In a large bowl whisk the sugar and eggs for about a minute.
- Mix in the pumpkin puree, olive oil, spices, and salt.
- Whisk in the flour, baking powder, and baking soda.
- Spoon out the mini muffins into the tin.
- Bake for 15 minutes.
- Make glaze by mixing all ingredients and adding water until desired consistency.
- Pour glaze over cooled muffins.

Makes a lot of mini muffins.
