Pumpkin Olive Oil Mini Muffins with Maple Olive Oil Glaze

Instructions

  1. Preheat oven to 350F.
  2. Butter mini muffin dish.
  3. In a large bowl whisk the sugar and eggs for about a minute.
  4. Mix in the pumpkin puree, olive oil, spices, and salt.
  5. Whisk in the flour, baking powder, and baking soda.
  6. Spoon out the mini muffins into the tin.
  7. Bake for 15 minutes.
  8. Make glaze by mixing all ingredients and adding water until desired consistency.
  9. Pour glaze over cooled muffins.

Notes

Makes a lot of mini muffins.
