Lemon (or Passionfruit) bars
Ingredients
Crust
- 8 oz (2 sticks) butter, melted and cooled
- 1/2 cup white sugar
- 2 tsp vanilla extract
- 1/2 tsp salt
- 2 cups all-purpose flour (KAF measure for measure)
Filling
- 8 large eggs
- 1 1/2 cups white sugar
- Zest from ~3 lemons
- 3/4-1 cup lemon juice (3-4 big lemons) or 1 1/2 cups passion fruit puree
- 1/2 cup all-purpose flour (KAF measure for measure)
Instructions
- Preheat the oven to 350°F. Line a 9x13 pan with parchment paper so that it extends up the sides.
- In a bowl, whisk together the melted butter, sugar, vanilla, and salt. Once mixed, add the flour and stir in. Scrape the greasy, greasy dough into the pan and squash it into an even layer.
- Bake the crust for 30 minutes at 350°F, until it’s golden brown. Meanwhile…..
- Zest the lemons. Set aside.
- In a large bowl, whisk together the eggs, sugar, and juice. Whisk in the flour as well. Strain into a new bowl. Add the zest.
- When the crust is ready, partially slide the rack out of the oven. Pour the filling over the hot crust and slide it back into the oven. Reduce the temperature to 325°F and bake for 35 minutes. It’s done when the center is firm.
- Remove the pan from the oven and let it cool until it reaches room temperature. Chill the bars. Cut and sprinkle powdered sugar before serving.
