Ginger Molasses Cookies

  1. Line a baking sheet with parchment paper. Preheat oven to 350F
  2. Mix flour, baking soda, spices, and salt. Set aside.
  3. In another bowl cream together butter and sugars until fluffy and pale. Slowly beat in eggs and molasses.
  4. Mix in the dry ingredients.
  5. Make a big ball and refrigerate or freeze. We want the dough fully chilled but still scoopable.
  6. Shape spherical dough balls (~1 inch diameter) and roll in a bowl of sugar (with a sprinkle of cinnamon).
  7. Bake for ~9 minutes. Gently move them to a rack using a spatula and let them solidfy for a few minutes.
