Ginger Molasses Cookies
Ingredients
- 4 1/2 cups flour (KAF measure for measure)
- 4 tsp baking soda
- 1 tbs ground ginger
- 2 tsp cinnamon (and a sprinkle for sanding)
- 1 tsp cardamom
- 1 tsp ground nutmeg
- 1 tsp salt
- 1 1/2 cup butter, softened
- 1 cup white sugar (and extra for sanding)
- 1 cup brown sugar
- 2 eggs
- 1/2 cup unsulphured molasses
- Vanilla extract
Instructions
- Line a baking sheet with parchment paper. Preheat oven to 350F
- Mix flour, baking soda, spices, and salt. Set aside.
- In another bowl cream together butter and sugars until fluffy and pale. Slowly beat in eggs and molasses.
- Mix in the dry ingredients.
- Make a big ball and refrigerate or freeze. We want the dough fully chilled but still scoopable.
- Shape spherical dough balls (~1 inch diameter) and roll in a bowl of sugar (with a sprinkle of cinnamon).
- Bake for ~9 minutes. Gently move them to a rack using a spatula and let them solidfy for a few minutes.
