Carrot Cake (from Caitlyn's family)
Ingredients
Cake (or muffins)
- 1 1/2 cups sifted flour (KAF measure for measure)
- 1 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 2/3 cup oil
- 2 eggs
- 1 cup grated carrot
- 1/2 cup crushed pineapple with juice
- 1 tsp vanilla
Cream Cheese Frosting
- 1/2 cup butter, softened
- 8 ounces cream cheese (brick, not spreadable!)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 4 cups powdered sugar
Instructions
- Butter a cake pan or muffin tin. Preheat oven to 370F.
- Mix cake ingredients and bake for ~37 minutes (probably less for muffins). Cool before frosting.
- For frosting, mix butter and cream cheese until combined. Mix in remaining ingredients until smooth.
