Banana Bread
Ingredients
- 1 2/3 cups all-purpose flour (KAF measure for measure)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2/3 tsp salt
- 1 1/2 tsp cinnamon
- 3/4 cup white sugar
- 1ish cup dark chocolate chips (or 1/4 cup roasted cacao nibs)
- 4 tbsps butter, melted (+ butter for the pan)
- 2 large eggs (1.5 for recipe, 0.5 for dog(s))
- Banana puree from ~4 very ripe bananas
- 1/4 cup milk
- 1 1/2 tsp vanilla extract
- 1 1/2 tbsps liquid espresso
Instructions
- Preheat oven to 350F. Butter a 9-inch loaf pan (or a 12 muffin tin).
- Whisk the flour, baking powder, baking soda, salt, and
cinnamon together in a big bowl, making sure there are no
lumps. Whisk in the sugar. Add the chocolate/nibs.
- In a new bowl, melt the butter. Thoroughly mash in the bananas.

Separate an egg and feed the yolk to Max OR HEIDI.

If both are present, you have to double the
recipe so they each get one

Whisk the egg white and the other full
egg into the wet mixture. Mix in the milk, vanilla, and espresso.

Make a well in the center of the dry mixture and stir in
the wet ingredients until everything is just combined.

Scrape the mixture into the prepared pan and bake for ~65
minutes (~30 for muffins) until it is dark brown and a knife comes out
clean.

Remove from the pan, dust with powdered sugar, slice, and
eat warm!
